UNC serving local, grass-fed beef

Holy cow. According to the Daily Tar Heel, one of the main on-campus eateries at UNC-Chapel Hill will serve up beef from local grass-fed cattle every Wednesday at lunch for the rest of this semester. The cows graze at Braeburn Farm and neighboring Cane Creek Farm in nearby Snow Camp. Carolina Dining Services teamed up with Fair, Local and Organic Foods, a student organization, to bring healthy, locally produced, sustainable beef to the Rams Head Dining Hall. One kink is that campus food vendor Aramark requires the farmers to send the meat to a processor more than two hours a way. Hey, it’s a start.
